I'm including this dish in my "Simple Suppers" series because it meets all my criteria! It's super healthy, with fish protein, fresh vegetables and healthy fats, and it cooks up in under thirty minutes on the stove top. Once the quinoa has rested, stir in the parsley and walnuts, fluffing as you combine. Remove from the oven, allow to cool and chop. Toast in the oven until golden, about 4 minutes. Meanwhile, spread the walnuts in an even layer in a pie pan or other oven proof dish. Then remove from heat and allow to rest for 10 minutes. Cook for approximately 15 minutes or until all the water has been absorbed. Add the water, bring to a boil, then reduce heat to low and cover. Add the quinoa, stir to combine, and cook for one minute. Add the shallot and cook for a few more minutes, until softened and translucent.

Then, add the pancetta and saute until crispy and beginning to brown, about 5 minutes.
